Ingredients:

  • 4 medium potatoes (Russet, Yukon Gold, or red potatoes)
  • 3 tbsp olive oil (or melted butter)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika (optional, for extra flavor)
  • ½ tsp dried rosemary or thyme (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Prep the potatoes:
  • Wash and dry potatoes (peeling is optional).
  • Cut into 1-inch cubes or wedges for even cooking.
  1. Season the potatoes:
  • In a large bowl, toss potatoes with olive oil, salt, pepper, garlic powder, paprika, and herbs (if using).
