A special request from one of our Foodies.
A square of sponge, a dunk in chocolate, a roll in coconut – simple, nostalgic, and oh-so-Aussie. 🥥☕ Who else is treating themselves today?
Ingredients
- 120g unsalted butter, softened
- 150g caster sugar
- 2 large Pace Farm eggs
- 1 tsp vanilla extract
- 180g self-raising flour
- 120ml milk
For the coating:
- 200g icing sugar
- 30g cocoa powder
- 100ml milk
- 20g butter
- 150g desiccated coconut
METHOD
- Preheat oven to 180°C and line a square baking tin (20cm x 20cm).
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each.
- Stir in vanilla, then fold in flour and milk alternately until smooth.
- Pour into tin and bake for 25–30 minutes, or until a skewer comes out clean.
- Let cool completely, then cut into squares.
- For the icing, combine icing sugar, cocoa, milk and butter in a bowl over simmering water. Stir until smooth.
- Dip each cake square in the chocolate icing, then roll in desiccated coconut.
- Place on a wire rack to set.
