Beef Stew with Toasted Bread

Ingredients:

  • 1 lb (450g) beef stew meat, cut into chunks
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 2 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 slices of crusty bread, toasted (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sear the Beef:
    In a large pot, heat olive oil over medium-high heat. Add the beef chunks and sear until browned on all sides. Remove the beef and set it aside.
  2. Sauté Vegetables:
    In the same pot, add the chopped onions, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften. Add the garlic and cook for another minute.
  3. Simmer the Stew:
    Return the beef to the pot. Add the beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine, then bring the mixture to a boil.
  4. Cook the Stew:
    Once it reaches a boil, reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors are well combined.
  5. Prepare Toasted Bread:
    While the stew is simmering, toast two slices of crusty bread. You can also rub them with a bit of garlic or butter for extra flavor if you prefer.
  6. Serve and Garnish:
    Remove the bay leaf from the stew. Serve the beef stew in bowls, topped with fresh parsley and a slice of toasted bread on the side.
