Ingredients:
- 1 lb (450g) beef stew meat, cut into chunks
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 4 cups beef broth
- 2 tbsp olive oil
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 slices of crusty bread, toasted (for serving)
- Fresh parsley, chopped (for garnish)
Instructions:
- Sear the Beef:
In a large pot, heat olive oil over medium-high heat. Add the beef chunks and sear until browned on all sides. Remove the beef and set it aside. - Sauté Vegetables:
In the same pot, add the chopped onions, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften. Add the garlic and cook for another minute. - Simmer the Stew:
Return the beef to the pot. Add the beef broth, Worcestershire sauce, thyme, rosemary, bay leaf, salt, and pepper. Stir to combine, then bring the mixture to a boil. - Cook the Stew:
Once it reaches a boil, reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors are well combined. - Prepare Toasted Bread:
While the stew is simmering, toast two slices of crusty bread. You can also rub them with a bit of garlic or butter for extra flavor if you prefer. - Serve and Garnish:
Remove the bay leaf from the stew. Serve the beef stew in bowls, topped with fresh parsley and a slice of toasted bread on the side.
Enjoy your hearty, flavorful beef stew!
