đź§€ Cheesy Corn Casserole

Ingredients:

1 can (15 oz) whole kernel corn, drained

1 can (15 oz) creamed corn

1 cup sour cream

1/2 cup (1 stick) unsalted butter, melted

1 box (8.5 oz) Jiffy corn muffin mix (or similar cornbread mix)

1 1/2 cups shredded cheddar cheese (divided)

1/2 tsp salt

1/4 tsp black pepper

Optional: chopped green onions, jalapeños, or red bell pepper for extra flavor


Instructions:

  1. Preheat Oven: Set to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix Wet Ingredients: In a large bowl, combine drained corn, creamed corn, sour cream, and melted butter.
  3. Add Dry Ingredients: Stir in the corn muffin mix, 1 cup of cheddar cheese, salt, and pepper. Mix until just combined (don’t overmix).
  4. Bake: Pour into the prepared dish and smooth the top. Bake uncovered for 40–45 minutes, or until golden and set in the center.
  5. Add Topping: Sprinkle remaining 1/2 cup of cheddar cheese on top and bake for another 5 minutes until melted.
  6. Serve Warm: Garnish with green onions or herbs if desired.
