Ingredients:

  • 6 medium potatoes, peeled and diced
  • 4 large eggs, hard-boiled and chopped (reserve a few slices for garnish)
  • 1 medium onion, finely chopped
  • 2 celery stalks, diced

Instructions:

  1. Boil the potatoes: Place the diced potatoes in a large pot of salted water. Bring to a boil and cook for about 10-12 minutes or until tender. Drain and let cool.
  2. Boil the eggs: In a separate pot, boil the eggs for 10-12 minutes until hard boiled. Let them cool, then peel and chop them, saving a few slices for garnish.
  3. Prepare the dressing: In a bowl, combine mayonnaise, mustard, salt, and pepper to taste. Mix well to create a smooth dressing.
  4. Assemble the salad: In a large mixing bowl, combine the cooled potatoes, chopped eggs, diced onion, and celery. Pour the dressing over and gently mix until everything is evenly coated.
