Crispy Potato & Cheese Bombs with Garlic Butter

Ingredients:

  • 2 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

1. Preheat oven to 400°F (200°C) and grease a baking sheet.2. Boil the diced potatoes until tender, then mash them in a bowl.3. Stir in cheddar cheese, Parmesan cheese, and parsley. Season with salt and pepper.4. Shape the mixture into small balls and place them on the baking sheet.5. In a small saucepan, melt butter and sauté garlic until fragrant.6. Brush the potato balls with the garlic butter mixture.7. Bake for 20-25 minutes or until golden and crispy.
