Perfect for family dinners or special occasions.

Ingredients

For the Onions:

3 large yellow onions, thinly sliced

2 tbsp unsalted butter

1 tbsp olive oil

½ tsp salt

½ tsp sugar (optional, helps caramelize faster)

½ cup beef broth

For the Meatloaf:

2 lbs (900 g) ground beef

2 large eggs

¾ cup breadcrumbs

½ cup milk

1 tbsp Worcestershire sauce

2 cloves garlic, minced

1 tsp dried thyme (or 1 tbsp fresh thyme)

1 tsp salt

½ tsp black pepper

For Topping:

1 ½ cups shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Instructions

Step 1: Caramelize the Onions

  1. In a large skillet, heat butter and olive oil over medium-low heat.
  2. Add onions and cook slowly, stirring often, for 25–30 minutes until deep golden brown.
  3. Stir in beef broth and cook until reduced. Set aside.

Step 2: Make the Meatloaf

  1. Preheat oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, garlic, thyme, salt, and pepper. Mix until just combined (do not overmix).
  3. Shape into a loaf and place in prepared pan.

Step 3: Bake & Top

  1. Bake meatloaf for 40–45 minutes.
  2. Remove from oven, spoon caramelized onions over the top, and sprinkle generously with Gruyère cheese.
  3. Return to oven for 10–15 minutes, until cheese is melted and bubbly.

Step 4: Serve

Let meatloaf rest for 10 minutes before slicing.

Garnish with fresh parsley and serve with mashed potatoes or roasted vegetables.

Tips & Variations

Cheese swap: If you can’t find Gruyère, Swiss or provolone work well.

Extra flavor: Add a splash of red wine to the onions while caramelizing.

Meal prep: Meatloaf can be assembled ahead, refrigerated, and baked the next day.
